Yes people of all genders join these treks and most groups are mixed. The big, licensed operators tend to run small to medium groups so you actually get to chat with folks instead of shouting over a tour bus PA.
companies I recommend: Oxalis and Jungle Boss if you want pro-level expedition stuff and Phong Nha Discovery or Moc Nam for smaller local tours. All of these run organized, permitted trips and have a ton of recent reviews on google. go check em out!
The guides I did the tour with were generally experienced and safety focused with the licensed outfits (I did the tour with both jungle boss and oxalis). If you want the safest bet, pick one of the four well known companies that run official treks in the park and ask about their guide to participant ratio.
If you prefer small groups where you actually meet people, say so when booking. Ask straight up how many participants, how many guides, what first aid they carry, and whether they have radio/phone comms for the route. If they hem and haw, move on. Reviews on TripAdvisor and google maps are golden!

having said all that, petty crimes do happen and in rarest of rare occasions you might have safety issue which you can avoid by using common sense in most of places.
